Fresh Salmon Portion With Quinoa

salmon with Quinon


  • 4 (5oz) Atlantic salmon portions or cut 4 (5oz) portions from a fillet
  • 2 tomatoes cut into cubes
  • 1tbsp Capers, drained
  • 8 Pitted Kalamata olives
  • ½ Red onion cut into wedges
  • 8pcs Peeled garlic cloves 
  • 1tbsp Olive oil
  • 1tspFinely cut chives for garnish
  • ½ cup Quinoa
  • 3 ounces arugula leaves
  • Salt and pepper to taste

Serves 4

Preparation for Quinoa

  1. In a pot, bring salt water to a boil
  2. Add quinoa and simmer for about 8 minutes or until soft (It will triple in volume)
  3. Drain, season with salt & pepper
  4. Keep hot


  1. Season salmon portions on both sides with salt and pepper
  2. Sear the portions with very little oil in a pre-heated non-stick pan on one side until golden brown for about 3 minutes
  3. Turn the portions carefully with a spatula and sear for another 3 minutes on medium heat
  4. In a separate pan heat the olive oil and sauté the onions along with garlic, and tomatoes until semi soft
  5. Add the capers, olives and the arugula. Toss until the leaves are wilted, season with salt and pepper if necessary
  6. Place the quinoa in the center of the plates, place salmon on top and distribute the tomato arugula toss evenly over the portions
